During the transition, recipes were a hit-and-miss conglomeration of internet resources and my favorite traditional recipes re-vamped (from my most favoritest cookbook from years past: "The Four Ingredient Cookbook"). The positive aspects of the ever tweaking process was an ability to improvise, plus fine-tune a recipe to meet our palate. The downside was never being sure what your going to get due to your trial & error, and since most of the recipes didn't start out with a health aspect, the tweaking only made them moderately more healthy.
Then by accident I happened upon @happyherbivore on twitter. That is the "handle" of a very talented Lindsay S. Nixon. Checking out recipes she had posted on her website made me curious about her new cookbook. Well "The Happy Herbivore" arrived in the mail this week from Amazon, and let me tell you; it's better than I could have imagained. Simple and affordable vegan recipes that center on being low-fat and healthy. Now for the breakdown:
The Purpose:
As Lindsay explains in the introduction, her goal was to: "bring healthy but delicious vegan food to others." I knew as with all "food regimens" that you typically have an option between healthy and not-so-healthy. I naively thought my wife and I had been on the "healthy" side. It took getting to just page 3 of "The Happy Herbivore" to realize how wrong I was. I was schooled on oils in an eye opening way. Another reason we had unwittingly deviated from the "healthy" side was convenience. There are so many processed foods available now for vegans, that the lure is hard to escape. I was sadly mistaken that eating a "healthy vegan diet" was somehow complicated, or required exotic ingredients or machines I could neither afford or have access to. In just 10 pages Lindsay was able in her introduction to explain the purpose of the cookbook, and all the ins and outs of making it happen. Then you get to the "meat" of the book:
Recipes
Broken down into logical categories, "The Happy Herbivore" is a great "Vegan Playbook". You can either do the guy thing (look at the pretty pictures to choose the meal you want) or be more dogmatic and use her handy dandy icons. On page 9 she outlines the icons you'll find for easy recipe classification. Categories are as follow:
* No Cooking Required
* Quick (30 minutes or less)
* Fat-Free
* Gluten-Free
* Soy-Free
* Kid-Friendly
* Omni-Friendly
So as your perusing the cookbook, the top of each page will have the icons that are applicable to that particular recipe. Need something quick & gluten free? Just look for recipes with the appropriate icons. You'll also notice at the bottom of each page is a nutrtition breakdown for each recipe. For an example of one of her recipes check out the "Hippie Loaf" from her cookbook "The Happy Herbivore".
Conclusion:

A couple of recipes I really liked are the "tuna" salad, and the cornbread. I substituted dill for the kelp in the "tuna" salad as that is what I had on hand. I also used Nasoya Nayonaise, Ff, 14-Ounce (Pack of 12) which I had on hand instead of using her mayo recipe. I haven't had real tuna salad in over a decade, and I almost thought that my next-day leftovers were the real thing, as my family had made real tuna the same day I made this recipe. I had to double check with them that they already ate all of theirs because it really reminded me of it. I also like the fact that it's so low-fat. I had developed a mock tuna salad that used seeds as the base so it was really high in fat, and it was a blessing to have a low-fat option.
The cornbread recipe was super easy to make and very moist. I made it in a cast iron skillet just like the regular cornbread and it was perfect.
The layout of the book is very user friendly, enjoyable to read and the format is easy on the eyes. I also like how the faux meats are in a section by themselves and not mixed in with the more whole food recipes. I liked the authors happy, upbeat attitude as well, which perfectly matched the title of her book.
All in all a great recipe book for everyone and anyone embarking on a plant food diet. After all isn't taking the healthy route the best way to start on a plant food diet? Especially if the recipes are that delicious!

Da ich nach 20 Jahren als Vegetarier nun vegan lebe, habe ich mir in den letzten Monaten auch etliche vegane Kochbücher zugelegt. "The Happy Herbivore" ist mein absoluter Favorit: Die Rezepte sind nicht nur frei von tierischen Produkten sondern dazu auch noch gesund, d.h. vollwertig und fettarm (völlig ohne Verwendung von Margarine oder Öl) - was man den Gerichten aber in keiner Weise anmerkt. Im Gegenteil hat alles, was ich bis dahin daraus gekocht oder gebacken habe einfach nur in jeder Hinsicht hervorragend geschmeckt, ohne dass ich *irgendetwas* vermisst hätte.
Dazu kommt, dass die Zutatenlisten überschaubar sind und sich der Großteil der Zutaten leicht besorgen lässt, was das Kochen einfach macht. Unüblich für ein amerikanisches Kochbuch sind die vielen, gut aufgenommenen, Fotos, die Lust darauf machen, die Rezepte auszuprobieren: Aus keinem Kochbuch habe ich bisher so viele Rezepte innerhalb so kurzer Zeit nachgekocht!
Einziger Nachteil: Das Buch verwendet - logischerweise - amerikanische Maßangaben, so dass man etwas umrechnen muss, aber diese Hürde ist schnell überwunden (und einen Stern abziehen will ich dafür auch nicht, da es ja nicht Schuld der Autorin ist, dass man in Deutschland "Gramm" und "Milliliter" anstelle von "cup", "ounce" und "tablespoon" gewöhnt ist).

I'm a big fan of Lindsay's cooking and blog recipes. I purchased this one just to get her cookie recipe and of course it was well worth it! We don't just double the batch we triple it and freeze the extra portion to use as snacks during the week. I don't add sugar as the apple puree I use had added sugar and it is a healthy snack for the kids for the week. I love knowing there is no hidden nasty in their snack. Of course I'm slowly working my way through her other recipes in the book but these are definitely worthwhile. I think I have all her books now!

I've had this book for a couple of weeks and love it. It's crammed full of healthy low-fat plant-based recipes with delightful photos. (So many vegan recipe books don't have a single picture). I've made a few meals already - the spicy sausage is great as are the black bean chocolate brownies and chocolate chip cookies. Can't wait for the next book.

I bought this book after stumbling across the authors blog and discovered that she cooks and bakes very similar to the way I do--no added fat. Unfortunately not all of my own recipes I attempt to replace the fat with turn out. So when I found out she had a cookbook I purchased it immediately, because I was so happy to find a book that was not only vegan but where the recipes contained no added margarine, oil or shortening, but instead whole foods. I have had this book about a week and have been making 1-3 recipes from it daily and have to say that everything I have made thus far has been very tasty. I have also gotten my family and boyfriend--none of whom are vegan, but rather pretty much pure carnivores-- to try all the recipes I make from this book and they have all enjoyed the meals and snacks I have been preparing!
I want to address one of the reoccurring negative complaints of this book:
-Many people comment saying some recipes in this book aren't really a recipe because the author uses onion powder or garlic powder. I have to completely disagree with these comments because I find this to be a pro, not a con. One of the reasons so many people don't cook or bake is because no one has the time to do it. I think using spices rather than chopping and dicing all the time is actually a great idea, and the recipes still taste amazing. There is nothing more daunting than a recipe with an ingredient list as long as the page telling you to chop this, dice that, julienne all this, but you don't find that in this book. And trust me, there isn't anything missing from these recipes, they taste amazing.
Pros:
-the author uses everyday ingredients. I rarely have to make special trips to the grocery store for these recipes as all the ingredients are staples in my cupboard. And being a student on a budget, I don't have that stocked of a pantry, so this is saying something.
-the recipes are easy to adapt. If you like extra spicy or prefer more of a mild taste, it is easy to modify these recipes to your preference
-it makes great portions. The recipes are great for at least 2-4 portions sometimes, which is great if (1) you are super hungry and just cooking for yourself or (2) you have leftovers for the next day, but its not like an obscene amount of leftovers which is nice.
-WHOLE FOODS are used! You won't find any white flour, or processed sugar in these recipes, so when you eat the food you know it is healthy for you. I don't think people should every associate guilt with food. I believe you can eat great tasting food that is just as nutritious as delicious and this recipe book does just that.
-Easy-to-follow lay out: I have read a lot of cookbooks over the time and sometimes there are just paragraphs everywhere with teeny tiny font and I mess the recipe up because I lose my place when reading the never ending directions. This book is short and to the point and that is exactly what I need. It is also difficult to mess these recipes up because the directions are short and to the point.
-Spices, spices, spices! I love how the author relies on spices for flavour, not fat. There is so much flavour in the recipes in this book, even my carnivore boyfriend and family members love them. Relying on spices is not only way healthier for you, but it makes the recipe super adaptable to your taste.

I have recently turned vegan and I was looking for a book to help me learn how to make some new vegan recipes. I wasn't looking for anything too fancy just everyday food. I have been very pleased with this book and it has several bookmarks in it already with recipes that I want to try out. I cook something new on my day off every week and so far I have made the banana bread and the soul burger, both were wonderful but the banana bread was amazing. I even took some to work and my coworkers couldn't believe it was healthy and vegan, it was seriously yummy! Next week I am going to try and make some of her sauces and maybe the meatloaf! I can't wait to get stuck in and I'm already looking at her other books since I'm so happy with this one.
