Help the Echeverria Family open their Bakery

To be honest this is truly unlike me. Even as I'm writing this I'm unsure what to say and a bit embarrassed to be asking for help when there are so many in need. 2020 has really been a crazy year and for so many families, it even started last year for ours. When my husband and I were suddenly let go of our jobs after 15 years of making pastries in SF. But staying positive I knew with some hard work we would be able to move on with our dreams. Starting a bakery of our very own. Something my husband and I have planned for since we started dating in 2010.
With a location, approved blueprints, and a couple of loans we were all in and feeling pretty confident we would succeed in our dream. Then, COVID happened. and a lot of things changed. A complete shutdown really slowed construction and any sort of city approvals we were looking for. Causing our bakery buildout to take 6 months longer than anticipated. My mom who lives with us had some bad health issues spending 2 months at UC Davis. She is now disabled and needs constant care. Like so many others my kids are distance learning, 1st, and 2nd grade. My son's autism diagnosis makes learning on a laptop nearly impossible. After all that, I was still pretty positive we were going to open... eventually. Until recently when my general contractor handed me a $19,000 invoice for additional charges and wants it paid immediately or he will stop construction. Since my business isn't open yet and we don't own our home. Loans are hard to come by.
So I'm turning to you, all you amazing people that might have the means to help our dream come true. To open a bakery, Ruby's Bakery and Cafe, named after our daughter. To wake up daily and bake amazing food with my husband for the people of Lodi, CA. To have the opportunity to be close to my family and spend as much time as possible with my kids. To support the local farmers and communities around us. I look forward to being in a position to fundraise and donate to those in need. Giving back to others is almost more exciting than the bakery itself. If only we could get our doors open. We truly appreciate anything you can give.
